All prices reflect 1 lb of cheese and that is both the minimum and the ordering size for everything. 

If you'd like more than 1 lb of a certain cheese, simply choose 2 or 3, etc as your desired quantity and we'll leave it as a 2 lb hunk, 3 lb hunk, etc unless you tell us otherwise. 

ie: you'd like a 5 lb hunk of Parmesan - put 5 in the qty box and click add to cart.

ie: you'd like 5 one lb hunks of Parmesan - put 5 in the qty box, click add to cart and then in a note when you finish your order, please be specific!

Again, the minimum size is 1 lb!

Other requests may / may not be granted depending on the shipping volume of that day. The cheese is cut fresh and shipped asap so our window to get orders together isn't huge.
So, if you're sharing that 1 lb hunk of Basil Jack with 3 of your neighbors, ask for extra labels and cut your neighbor's pieces when our box gets to you.

Again as we cut everything fresh when we fill your order, it is best to consume the cheese within a week or two. After that on some of the softer cheeses, you'll see a little mold start to grow. Trim to refresh and also save rinds / odds and ends for soups or of course for that lovely peasant dish - fondue: grate all the butts / rinds / misc together and slowly stir into warmed up (not boiling) wine with maybe a little garlic and black pepper and your leftovers are quickly elevated to the sublime!
