We take a young gouda made near Monroe, WI and then applewood from the only organic orchard in Missouri to a small family owned smokehouse west of Rockford, IL. 

One of our most popular cheeses. The smoky character is reserved, almost sweet. If you've only had the typical nose burning hickory smoked version, this is a treat.
A favourite of the under 10 crowd too.
